Vegan Apple Pie Oatmeal

Vegan apple pie oatmeal is the perfect cozy and satisfying cold weather breakfast. All the flavors of classic apple pie paired with creamy steel-cut oats to keep you full til lunch! Prep a batch of this healthy vegan breakfast for the whole week.

For the oats:

  • 1 cup steel cut oats
  • 2 cups of water
  • 2 cups cashew milk or other unsweetened plant milk
  • a pinch of sea salt
  • 1 tbsp vegan butter or coconut oil, optional

For the apples:

  • 2 large apples
  • 1 tbsp vegan butter or coconut oil
  • 2 tbsp brown sugar
  • 1 tbsp apple pie spice blend (see notes)

For topping:

  • your favorite granola
  • extra spices, optional
  • tahini or almond butter, optional

Instructions

  1. In a large pot, toast the dry oats over high for a minute.
  2. Add the cashew milk and water and bring to a boil. Reduce the heat to low and cover with a tight-fitting lid.
  3. Cook for 45-60 minutes or until the oats have thickened, stirring occasionally. If you want a thinner porridge, add a splash of hot water. If you want them thicker, cook for the full 60 minutes. Stir in the vegan butter at the end of cooking, if using.
  4. While the oats cook, chop or slice your apples.
  5. Heat 1 tbsp coconut oil or vegan butter in a frying pan over medium heat and add the brown sugar and apple pie spice. Stir well to dissolve the sugar. Add the apples and a splash of water, then toss or stir to coat the apples in the spiced sugar mixture.
  6. Cook for about 5 minutes, until the apples are soft and the cooking liquid has thickened. Stir often to prevent it from burning.
  7. Divide the cooked oatmeal into four servings and top with the spiced apples. Add other toppings like tahini, granola, and more apple pie spice if desired.
  8. Store leftovers in a tightly sealed container for up to 5 days.

Notes

I have a great DIY Apple Pie Spice Blend recipe here. You can also use a storebought apple pie spice blend, or you can include 1 tsp cinnamon and 1/4 tsp each nutmeg, ginger, cardamom, and allspice.
