Creamy Golden Oatmeal with Cardamom Caramelized Bananas

This creamy golden oatmeal is flavored with anti-inflammatory turmeric, lush coconut milk, and sweet cardamom caramelized bananas. The base of steel cut oats can be prepared days in advance so you have a warm and nourishing breakfast to dig into each morning. Optional but highly recommended cardamom caramelized bananas add a touch of indulgent sweetness and elevate this to a special occasion breakfast that can be enjoyed any time.

 

Winter can be a tough time to feel motivated to take care of yourself, but it’s the time of year when it’s most important to settle into some simple routines that help you stay well. A nourishing breakfast is one of those cozy habits- I have oats 6 out of 7 days a week (the other day is bagels of course) and it works for me. If plain oats day after day sounds as unappealing to you as it does to me, consider preparing yourself a batch of this indulgent and nourishing oatmeal. You can share with family for a cozy winter breakfast or have leftovers for breakfast for a few days. Keep reading to learn how to cook steel cut oats and to easily caramelize bananas in the oven.

How to make Creamy Golden Oatmeal:

  • Heat a little coconut oil in a large pot, then add turmeric, cinnamon, and black pepper and toast the spices for a minute.
  • Add your steel cut oats along with the water and bring to a boil.
  • Cover and cook, then stir in the coconut milk.
  • Continue cooking until thickened.
  • Top with cardamom caramelized bananas and an extra drizzle of coconut milk.
  • Eat right away or save for future breakfasts.

 

 

How to make Cardamom Caramelized Bananas:

  • In a small bowl, combine brown sugar, cardamom, and a pinch of salt.
  • Slice three bananas lengthwise or into ovals or coins.
  • Place the sliced bananas on a sheet pan and sprinkle each slice with the cardamom sugar mixture.
  • Place the pan under your broiler for several minutes until the bananas are golden brown and bubbly.

Ingredients

For the Creamy Golden Oats:

  • 1 tbsp unrefined coconut oil
  • 3/4 tsp ground turmeric
  • 1/2 tsp cinnamon
  • a few cracks of black pepper
  • 1 cup of steel cut oats
  • 4 cups of water
  • 1 cup coconut milk from a can

For the Cardamom Caramelized Bananas:

  • 3 bananas that are yellow but not too spotted
  • 2 tbsp brown sugar
  • 1/2 tsp ground cardamom
  • 1 pinch of salt

Instructions

  1. Bring a large pot to medium-high heat and add the coconut oil. once it’s melted, add the turmeric, cinnamon, and black pepper to the oil and stir well.
  2. Let the spices cook for a minute or two and then add the oats and the water.
  3. Increase the heat to high until it comes to a boil and then stir well and reduce heat to low, cover, and cook for 35 minutes.
  4. Remove the lid and stir the oatmeal really well, making sure to scrape up the bottom of the pot which may have some oatmeal starting to stick. Keep stirring to release the starch in the oats for a full minute or so. There should be some liquid left but the process of stirring should thicken it quite  a bit.
  5. Return the lid to the pot and cook for another 5 minutes until the oats are very thick and little to no liquid remains, then remove from heat and stir in the coconut milk. Cover and set aside while you prepare the bananas.
  6. Mix together the brown sugar, cardamom, and pinch of salt in a small bowl. Cut your bananas in half lengthwise or into coins or long ovals.
  7. Place the bananas on a sheet pan and sprinkle with the sugar and cardamom mixture. Preheat your oven’s broiler and then place the pan under the broiler for several minutes, depending on your oven broiler’s heat level. It took my bananas about 5 minutes to become golden and bubbly but it might take more or less time in your oven. Check on them every minute or so after 3 minutes. If desired, use a small blowtorch to finish them off.
  8. Portion into 4 individual bowls or storage containers and top with extra coconut milk, and cinnamon if desired. Place a few pieces of banana on each serving. If you’ll have leftovers, I’d recommend mashing up any remaining caramelized bananas and stirring it into the leftover oats before storing in a tightly sealed container for 3-4 days.

Showing off a few of my 5⭐️ reads from this year before we get too far past the halfway point of the year! I am a library book lover and a lender of the books I own and love most, so unfortunately many of the books I’ve rated 5⭐️ this year are no longer in my possession. In particular, I’d like to mention Purple Hibiscus by @chimamanda_adichie which is possibly the best book I’ve read this year. I loaned my copy to a friend at the start of quarantine so it wasn’t available for the photoshoot 📖

Let something ordinary arrest you with its beauty today. If you can lie awake for hours drowning in fear, you can let one moment consume you with joy or at least surprise that life can be so sweet. ⁣
Just the dreamiest at-home cardamom vanilla latte 🥰 I added a pinch of sea salt and cardamom to the coffee grounds before brewing as well as a dash of vanilla in the milk while frothing. Such a tasty afternoon pick me up (because apparently now I drink coffee any time of day 🙃)⁣
In college I ate oatmeal with banana and peanut butter every single morning, alongside a cup of hot tea or coffee. That’s hundreds of bowls of the exact same oatmeal I’ve eaten in my life. And it still hasn’t gotten old 😆⁣
