A refreshing summer mocktail made with fresh seasonal ingredients. Watermelon juice is hydrating, flavorful, and easy to make. This lemonade is naturally sweetened and flavored with fresh mint.

Ingredients
3 cups watermelon juice*
1/4 c lemon juice
handful of mint leaves
sparkling water of choice
ice
extra lemon slices and mint leaves to garnish, optional
Instructions
Fill 4 tumblers (about pint size) with ice, then use your hands to lightly crush your mint leaves before adding them to the glasses.
Divide the watermelon juice and lemon juice between each glass and top with sparkling water.
Garnish with more mint leaves and fresh lemon slices if desired. Enjoy!
Optional alternative- make the drink in a large pitcher or jar, doubling the recipe if desired, and pour into glasses as desired.
Notes
*to make watermelon juice, I simply blend the flesh of a watermelon until smooth and then strain it through a nut milk bag or cheesecloth. store in jars or a pitcher in the refrigerator for up to 4 days.
