I’ve created three of the most delicious fall-flavored syrups to sweeten your coffee throughout the colder months. Whether you’re looking for an alternative to the classic pumpkin spice latte or just hoping to make your daily coffee ritual a little more special, any one of these easy homemade coffee syrups will be the perfect addition to your morning caffeine fix!
Floral yet grounded lavender cardamom syrup, deep and rich apple cinnamon brown sugar syrup, and a classic vanilla chai syrup are all easy to make, packed with flavor, and store in the fridge for up to two weeks! Save money by making your coffee at home but don’t sacrifice those fun and creative coffee shop flavors in your hot or iced coffee drinks.
How to make flavored coffee syrups at home



To recreate some of your favorite coffee shop flavors, you’ll need three main ingredients- a liquid, a sugar, and a flavor element. Water and sugar heated together until the sugar dissolves creates a simple syrup- you can stop here and use this syrup to add a neutral sweetness to coffees and other beverages. However, you can add various herbs, spices, extracts, and other ingredients to customize your flavored syrup, simmering the syrup with your flavor elements to infuse the syrup in a matter of minutes.
At the end of this post, you’ll find my simple recipes for three different flavored homemade coffee syrups. I think there’s something for everyone here and I encourage you to customize these flavor profiles to your own tastes!
Lavender Cardamom Simple Syrup

This is my favorite of these recipes- the floral lavender is complemented by the slight citrus peppery flavor of the cardamom. I think this would be a great flavor to use year round, but I especially love making herbal infusions in the winter time. I would recommend adding this syrup to your iced oat milk latte or even your matcha latte- a little goes a long way!
To make this syrup, you’ll heat water and sugar together in a saucepan until the sugar is dissolved, then add the dried lavender blossoms and the cardamom pods. Let the mixture simmer for a moment, then turn off the heat and let the flavors infuse for 15 minutes before straining the syrup into a storage bottle or jar.
Apple Cinnamon Brown Sugar Syrup

This rich and flavorful syrup is the perfect seasonal addition to your coffee. The combination of apple and cinnamon is classic and using brown sugar to replace some of the white sugar increases the depth of flavors in such a lovely way. I think this apple cinnamon syrup is amazing in a hot latte but if you were to add it to a whiskey cocktail, I certainly wouldn’t tell anyone.
To make this syrup, heat apple juice, brown sugar, and white sugar in a saucepan until the sugars are dissolved, then add your cinnamon sticks and reduce the heat to low to simmer the cinnamon sticks for 15 minutes. Carefully remove the cinnamon sticks and your apple cinnamon brown sugar syrup is ready to enjoy!
Vanilla Chai Simple Syrup

To be clear, this is not an authentic chai recipe by any means! If that’s what you’re looking for, I encourage you to check out this recipe from Nisha Balsara, one of my favorite creators whose authentic Indian recipes are always incredible.
This vanilla chai syrup is made with bagged chai tea and vanilla extract, so it’s an accessible way to enjoy a classic coffee shop chai experience at home. Stir it into your coffee or simply add it to steamed milk for a caffeine-free hot drink option. I used decaf chai tea bags for this recipe but feel free to use the caffeinated version or the whole chai spices if you prefer.
To make this syrup, heat water and sugar in a saucepan until the sugar is dissolved. Next, add the tea bags and turn the heat up to high until it just starts boil, then immediately turn off the heat and set aside for 5 minutes to brew the tea into the syrup. Remove the tea bags, stir in the vanilla extract, and enjoy!

Ingredients
For the Lavender Cardamom Simple Syrup:
- 1 c water
- 1 c cane sugar
- 12 cardamom pods, crushed until they crack open
- 3 tbsp dried or fresh lavender blossoms
For the Apple Cinnamon Brown Sugar Syrup:
- 1 c apple juice or apple cider
- 1/2 c cane sugar
- 1/2 c brown sugar (not packed)
- 3 cinnamon sticks
For the Vanilla Chai Syrup:
- 1 c water
- 1 c cane sugar
- 6 chai tea bags (decaf or regular)
- 1/2 tsp vanilla extract
Instructions
For the Lavender Cardamom Simple Syrup:
- In a small saucepan on the stove over medium heat, add your water and sugar and stir as it heats up, continuing to stir until the sugar has dissolved into the water.
- Add the lavender blossoms and crushed cardamom pods and stir well. Turn off the heat and set a timer for 15 minutes to allow the lavender and cardamom flavors to infuse into the syrup.
- After 15 minutes, carefully strain the syrup into a bottle or jar and store for 1 -2 weeks in the refrigerator if the container is clean and tightly sealed.
For the Apple Cinnamon Brown Sugar Syrup:
- In a small sauce pan on the stove over medium heat, add the apple juice and sugars, stirring to dissolve the sugars as the mixture heats up. Once the sugars are dissolved, add the cinnamon sticks and reduce the heat to low.
- Simmer the cinnamon sticks in the syrup on low for 30 minutes. At this point you can remove them or let them sit in the syrup til it cools, depending on how strong you want the cinnamon flavor.
- Carefully remove the cinnamon sticks and store the syrup in a clean tightly sealed container in the refrigerator for 1-2 weeks.
For the Vanilla Chai Syrup:
- In a small saucepan on the stove, heat your water and sugar over medium heat, stirring until the sugar is completely dissolved.
- Get your tea bags ready and increase the heat to high just until the syrup starts to boil, then immediately remove from the heat and add the tea bags. Let the tea infuse in the syrup for 5 minutes, then remove the tea bags and stir in the vanilla extract. Transfer the syrup to a clean container with a tightly fitting lid and store in the refrigerator for 1-2 weeks.
